These muffins are great just out of the oven like all things baked. But I have found days after, they are just as tasty popped under the grill to toast and then buttered.
Scrummy!
I like to have play in the kitchen and on a recent day off created these muffins for lunch. I reckon that you could change the ingredients for your own taste. I do love blue cheese so hence why chose gorgonzola!
Recipe
Ingredients to make 12:
200g Bacon lardons (bacon rashers chopped)
200g Gorgonzola
5 x Cherry tomatoes
50g Coconut flour (use any type of flour you wish)
4 x Large eggs
1 x Teaspoon baking powder
1 x pinch nutmeg (I find goes really well with cheese dishes)
1 x Pinch of salt
Method
- Preheat oven to 200°C or gas mark 5, grease a 12 hole muffin/cupcake tin or use cases. I like using my silicone cases as don’t need to grease at all).
- Put your bacon lardons in a frying pan and cook until browned.
- Add the gorgonzola, nutmeg, salt, baking powder in with the bacon and simmer until gorgonzola has melted. Take off the heat.
- Whisk the eggs with the flour until combined.
- Once the bacon/gorgonzola mix has cooled a little stir in with the egg mix.
- Spoon into your muffin tin/cases and bake in the centre of an oven for 15 minutes.
- Eat as many as you can straight away! Hahaha!!

and for my next recipe…
How about brie and cranberry?
