Breakfast Pancake

Breakfast Pancake Light Bulb Moment!

Keto pancakes yesterday morning for breakfast and had left over batter and thought better use that up, but really felt like bacon, OMG dilemma!  I am a real breakfast foodie.  Normally my first thoughts of the day are thinking what shall I have whilst walking down the stairs (sad I know). But this morning had an absolute blinder of an idea which paid off as far as I’m concerned.  Breakfast pancake!  Added bacon and cheese but I reckon you could get sausage, mushroom, tomato, maybe a push at beans but they could be a side.

Per person you need:
  • 50g Fat free cottage cheese
  • 1 x Egg
  • 1 x Tsp Psyllium husk powder
  • 2 x Rashers bacon (chopped)
  • Chopped parsley
  • 20g Grated cheese
  • Cooking oil (coconut if following Keto)

You could of course make using your normal batter mix with whatever you fancy in your pancake for breakfast.

  1. In a mixing bowl, combine the cottage cheese, egg and psyllium husk powder.  Allow 5 minutes for the batter to thicken.
  2. Using a non-stock pan heat a drizzle of oil on a low heat.
  3. Adding the chopped bacon to the pan, stir-fry for couple of minutes, add parsley and season well.
  4. Pour an amount of batter into pan frying pancake for approx 3-4 minutes (till golden).
  5. Flip pancake add your grated cheese and then I popped under grill to finish melting cheese to perfection!

PS: If you dislike the curd lumps in the cottage cheese, blitz with a blender for a smooth batter.

I then served with a slight smattering of hollandaise sauce before rolling.  This was amazing for a 5 minute brain wave. Also went onto thinking lunch ideas could be brought into this, so watch this space for other ideas, or share with us yours.
